Christmas Sugar Cookies
Sugar cookies are one of my all time favorite cookies out there. This recipe was normally just made at Christmas, but can be made at anytime of the year. I will say that whenever I bite into a cookie made from this recipe, many memories of making these cookies in my mom's kitchen and eating them at my Grandma's house at Christmas come to my mind. So, since I have many memories from my childhood with these cookies, I have decided to start making them so my son will have those same memories as well.
2 1/2 C flour
1 1/2 C confectionery sugar
1 tsp vanilla
1 tsp baking soda
1 C butter
1 tsp cream of tartar
1/2 tsp salt
You'll first want to soften the butter in the microwave. This will help make mixing easier. Just make sure not to melt it. If it starts becoming liquid, you've gone a little too far, but you should be fine as long as the butter is not completely melted.
Once the butter is softened, put in a mixing bowl and add the confectionery sugar.
Mix together until you get a nice cream mixture.
Add the egg.
Add the vanilla and mix everything together.
In a separate mixing bowl, add flour.
Add baking soda.
Add cream of tartar.
Add salt.
In my grandma's instructions, she had said to sift the dry ingredients together. I do not have a sifter, so I took my whisk and just mixed everything together.
Once the dry ingredients are mixed, pour them into the other mixture.
Mix together until you get a nice dough. Place in fridge to chill. I let the dough chill for about 30 minutes.
Once the dough has been chilled, pour some flour down on the area where you are going to roll out the dough. This will help keep the dough from sticking to the surface area. Don't forget to sprinkle some flour on the rolling pin as well.
Roll dough out until it's at the thickness you want. While you're rolling out the dough, preheat your oven to 400 degrees F.
Start placing your cookie cutters out on the dough and cut out your cookies.
Place the cut out dough on a cookie tray. Once your trays are filled and the oven is preheated, bake for 7 minutes.
When cookies are done baking, take them off the cookie sheets and let them cool. I will tell you that my first batch was baked for 7 minutes and got a little burnt on the edges. My next batch, I baked for about 5 minutes and they came out beautiful. Just keep an eye out while baking because not everyone's oven bakes the same. My grandma might have said 7 minutes because my grandfather likes his cookies on the crunchy side.
