Grandma's Meatloaf
Meatloaf is one of those meals that brings me back to my childhood. Since it was my dad's favorite meal and a rather cheap meal to make, my mom would make it frequently. Now that I'm married and a mom, I love sharing things of my childhood with my family. I hope that Michael, once he starts liking hamburger, will have fond memories like I do when eating meatloaf.
Several years ago, my grandma sent me this recipe card with her recipe to make meatloaf. My grandma is a great home cook and I love that she sent me this recipe. We don't care for the ketchup topping so I don't bother to make it and Jon doesn't like green peppers so, those items have been removed. I also only used 1lb of hamburger instead of two.
2 eggs
4 slices moist bread (best if not fresh)
1 onion
1 green pepper
*Make half the recipe for 2 people
You'll want to first preheat your oven to 350 degrees. Then in a large mixing bowl, add your hamburger.
Add your diced onions and green peppers.
Dampen the slices of bread slightly and then cube them. I just tear them apart with my hands into small pieces and add to the bowl.
My grandma has to beat the eggs before adding to the bowl. I never saw my mom do this and I didn't want to clean another bowl and spoon. Because I used 1lb of meat, I'm only using 1 egg.
With your hands, you'll want to mix everything together. Once everything is blended perfectly together, you'll want to form it into a loaf and place into a baking dish.
Bake in the oven for an hour. If you want to have a ketchup topping, after it has been baking for 30 minutes top with 2 Tbls of ketchup mixed with a little bit of water. Put back in oven and let bake for another 30 minutes.
Pair it with some mashed potatoes and your vegetable of choice. If you have an leftovers, meatloaf cold with mayonnaise in between two slices of bread is delicious! There you have this simple meatloaf recipe from my grandma's kitchen!
